Sara Leveen and Ben Lowell first visited Hanoi in 2013, and their kickoff meal in Vietnam’s capital was life-changing. At the restaurant Bun Cha Dac Kim, they noshed on vermicelli bowls made with charred pork and crab spring rolls, and it was then and there that they decided to open their own Vietnamese restaurant in New York City. A return trip in 2016 brought them design inspiration and a better understanding of key ingredients like dill, pineapple, and ham. They opened Hanoi House in New York City’s East Village at the beginning of 2017, to critical acclaim and nary an empty table. Here, they share their guide to the Vietnamese city that started it all.
